Ingredients

  • 1 (15.25 ounce) can sweet corn, drained
  • 1 cup cornbread mix (such as Jiffy®)
  • 1 cup pancake mix with buttermilk
  • ½ cup evaporated milk
  • ½ cup white sugar
  • ⅓ cup vegetable oil
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon honey
  • ½ teaspoon salt

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  2. Combine corn, cornbread mix, pancake mix, evaporated milk, sugar, oil, butter, honey, and salt in a large bowl; whisk together. Pour into the prepared baking pan.
  3. Bake in the preheated oven until golden and a toothpick inserted into the center comes out clean, about 30 minutes.
You can use two 8-inch pans instead of a 9x13-inch.
