Ingredients

  • cooking spray
  • 1 ½ cups complete pancake mix
  • 1 cup shredded mozzarella cheese
  • ¼ cup finely chopped onion
  • 1 (16 ounce) package frozen chopped kale, thawed
  • ⅓ cup milk
  • ⅓ cup ricotta cheese

Cooking Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  2. Mix pancake mix, mozzarella cheese, and onion together in a large bowl. Add kale, milk, and ricotta cheese; mix until combined. Scoop batter into the prepared muffin tin.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
